“CAIAZZAN OLIVES”
Caiazzan olive is variety typical of the territory after it is named of: Caiazzo, in the province of Caserta. A hilly territory that climbs from the plain to the Matese massif. Its cultivation is proved to be very ancient: some have found carved stones, dated in the pre-medieval era, characterized by holes used for the olives transformation. The fruit is characterized by an elliptical shape with a rounded apex and a slightly flattened base, with a purple-black color from the outside to the pit. According to tradition, it is consumed after cooking (baked), preserved in brine or in oil, but there are also some local conservation variants, for instance preserved in ash.
